Holiday Baking
15:01
So many of you may be wanting to know what exactly to bake these holidays and so I have a few recipes to share with you that are not specifically for a certain holiday but they are perfect to make anytime. So for today I have Honey Cakes. And can I just say that they are AMAZING! Like they are so good they are melt in the mouth amazing. So if you like good food then listen up...
They are the perfect treat to have a tea time with a cup of tea or coffee. I know there are a lot of cakes which are way too sweet of way to savory so this cake is just in the middle and bite size so you can eat one whole slice and not feel guilty.
Honey Cakes
Makes 16 squares
Ingredients:
175g butter, plus extra for greasing (6 oz or 3/4 cup)
175g clear honey (6 oz or 3/4 cup)
115g soft light brown sugar (4 oz or 1/2 cup)
2 eggs, lightly beaten
15-30ml milk (1-2 tbsp)
225g self-raising flour (8 oz or 2 cups)
Method:
1. Grease and line a 23cm/9 in square tin with baking parchment.
2. In a pan, gently heat the butter, honey and sugar, stirring until the sugar has dissolved and the butter has melted. Set aside to cool slightly.
3. Preheat the oven to 180 C or 350 F or Gas 4.
4. In two batches, beat the eggs and milk into the cooled mixture in the pan, using a wooden spoon.
5. Sift the flour over the top, stir in and beat well. The batter should have a smooth pouring consistency.
6. Pour the mixture into the tin. Bake for 30 minutes, or until well risen, golden and firm to the touch.
7. Cool for 20 minutes, then turn on to a wire rack to go cold. Remove the paper lining and cut into squares.
